Sambucus

Elderberry

Sambucus is a genus of flowering plants in the family Adoxaceae. It is commonly called elder or elderberry.

Plants have large clusters of small white or cream-colored flowers, which bloom in late spring; these are followed by clusters of small black, blue-black, or red berries.

Elderberries are rich in anthocyanidins that give elderberry juice an intense blue-purple color.  Elderberry juice color is listed by the USFDA as allowable in certified organic food products.

Care should be taken with its berries, as they can be poisonous.
